Description
We grow shiitake mushrooms using the traditional method on woodlogs in the forest. It is a seasonal outdoor production, the harvest takes place from June to October. During the season, we dry the mushrooms that we use throughout the year to produce two preserves by hand in small batches with the addition of only extra virgin olive oil and lemon juice. In this way our shiitake mushrooms grown in the forest are available and ready for use throughout the year.
